Yam Kuey


Topping:
Roasted peanut, ground it become fine
Spring onion
Fried dried prawn
Chillies - blended with garlic and added with lemon juice and a teaspoon of sugar
Yam Kuey (Steam Yam cake)
Prepare abt 350g of rice flour. Add in water about 800ml, 2 table spoon of corn starch, 2 teaspoons of salt, 2 tablespoons of fish sauce, 2 tablespoons of soya soy mix it togather until well mixed.
Cut 400g Yam into small dices. Prepare some dried prawn (chopped fine) and garlic (chopped fine as well). Fry the yam, dried prawn and garlic in oil pan. When dried prawn turn into golden color. Add a bit of water to make sure that the yam cooked soften. After, cooked the yam, add it into the pot of blended rice flour water mixed. Mix everything togather. Then pour in onto any utensil that flat such as square pan. Prepare a steam pot and steam the yam mixed for about 30 mins.
Then, the yam kuey (yam cake) can be served with the topping

Hainanese chicken rice with BBQ chicken wings







Ingredient:
3 table spoons of Hainanese chicken rice mix
3/4 big lemon
1/2 of big red onion
80g of red chillies
1/2 teaspoon of salt
1 teaspoon of sugar
3 table spoons of "kunyit" powder
few slices of USA lettuce
Thai rice
Rice:
Cook 2 cup of rice (for 2 person). Reduce the amount of water by few table spoons than normal cooking rice water. Add in 3 table spoons of Hainanese chicken rice mix into the rice cooker and mix it before it start cooking the rice.
If there is pandan leave, it is better to add in 2 slices of pandan into the rice before start cooking the rice.
Chillies:
Chillies sauce is most the important side sauce for Hainanese chicken rice. Add in the red chillies with 1/2 big red onion into the blender. Add a bit of water to ensure the blending smoothly. After blended the chillies sauce, squeeze the lemon juice into the sauce. Add on 1/2 teaspoon of salt and 1 teaspoon of sugar into the chillies sauce and mix it.
Chicken wings:
Marinate the chicken wings (4 chicken wings) a night before the meal. Add 3 table spoons of "kunyit" powder, 2 table spoon of sugar and 2 & 1/2 table spoon of salt into the chicken wings. Mix it and marinate it. If the marination is too dry, add few drops of soya sauce and waters to have a well mix of the marination.
Take out the chicken wing before prepare for the rice. Put it into the pre-heated oven and grill it at 200 degree for 40 minutes. After half of the time, flip the chicken wing to the other side to ensure the whole chicken wings are grill evenly.
Slice the lettuce into the shape that shown in the photo before it serve the meal.

Brain food



Although I had past the last semester exam with flying colours, it seems to me that ageing is really a hurdler to have good a memory and analytical skill. Headache had been troubling me during my last exam and seems that now it takes me longer time to finish study just a page of note.

Back again with - Malaysia satay

Recepi of home grill satay.






Chicken satay:

Prepare the chicken fillet/breast (400g) and marinate it with fine chopped lemon grass (2 stalks), kunyit powder (3 table spoons), sugar (2 tables spoons), and salt (2 table spoons).


Keep the marination overnight.


Satay sauce:

Prepare 1 stalks lemon grass and chopped fine.

200g of ground peanut, roasted the peanut. Grind the peanut until it become fine.

Blend 1 red onion with 100g of fresh big red chilies.

Add the blended onions and chillies into the pan and stir fried until golden colour. Then, add on the lemon grass intil the pan with 1 teaspon of salt, 2 table spoons of sugar and 100g of water. Add on 1 teaspoon of corainder. Finally, add on the grinded peanut after the sauce thicken.


Grill satay chicken:

Put the chicken into skew stick and grill it inside a preheated oven at 200 degree for 40 minutes. Spread the skew chicken with some oil and also honey before start to grill and when the satay is about to ready.


Finally, serve the satay chicken with the sauce with some slices cucumber and fresh red onions.

My garden

My garden become a mess. But seem like many tengah berbunga and berbuah, so I cannot do any transplant anymore. The reason why I try to squeeze all together is due to save more water. I can water the plant in smaller perimeter.
